The mixture doesn’t form dough to be kneaded and then set aside to rise, just a thick batter. In the 1960s it became even more popular because it was so easy to make. Banana bread is actually the most popular in cafes in Australia where it is at served at breakfast.

Now there are any many different variations of this simple recipe, like healthy banana bread, banan nut bread etc... Here is a <strong>classic version of homemade banana bread</strong>. It is actually made more like a cake so that it has a smooth texture with smaller crumbs.

<strong>Homemade Banana Bread Ingredients</strong>

1/2 cup butter<br />
1/2 cup sugar<br />
1/4 cup brown sugar<br />
1 egg<br />
1/2 teaspoon cinnamon<br />
2 teaspoons baking powder<br />
1/2 teaspoon baking soda<br />
1/4 teaspoon salt<br />
2 cups of flour<br />
2 ripe bananas<br />
1 tablespoon buttermilk<br />

1. Preheat the oven to 350 degrees.<br />

2. Place peeled bananas in a small bowl and mash them with a fork. Stir in the buttermilk and set this aside.<br />

3. In a larger bowl mix together the butter and both sugars until they are fluffy.<br />

4. Add the egg and beat once again until well blended.<br />

5. Combine the flour, baking soda, baking powder, salt and cinnamon in a sifter and then sift this into a bowl.<br />

6. Alternate adding the dry ingredients and the banana mixture to the butter and sugar in the mixing bowl. Start with the dry ingredients and end with the dry ingredients and always beat thoroughly before the next addition.<br />

7. Coat a 9” by 5” loaf pan with the type of cooking spray that has flour in it. Spoon the batter into the pan and spread it out evenly.<br />
<br />
8. Bake for 45 to 60 minutes. The time will depend on how accurately your oven heats. The bread is done when is a dark golden brown. Check to be sure by inserting a toothpick directly into the middle. If it comes out clean, the bread is done.<br />

9. Remove bread and cool on a wire rack.<br />

<strong>Banana Bread Variations</strong><br />
There are a lot of things you can to vary this recipe, which does not have nuts. Add 1/2 cup chopped walnuts or pecans.<br />

I like to give my banana bread a Jamaican flair occasionally. Use this recipe (with nuts), leave out the buttermilk and add two tablespoons of rum. After you’ve poured the batter into the loaf pan, sprinkle 1/2 cup of coconut on top and then bake as usual. Make a glaze of 1/2 cup of powdered sugar and 1-1/2 tablespoons of fresh lime juice. 			<title><![CDATA[Low carb, low glycemic and protein rich banana nut bread]]></title>

This is a very moist cake, filling but healthy as well as balanced with all the good fats (Omega 3s), great source of protein from the chickpeas and no insulin load as agave does not have the same effect on insulin levels.  This recipe is also diabetic friendly.<br /><br />

<h3>For This low carb, low glycemic and protein rich banana nut bread you will need</h3>
2/3 cup of Agave Syrup<br />
1/2 cup of olive oil<br />
2 large eggs<br />
2 large bananas or 3 medium bananas (mash by hand if doing the mixture by hand otherwise can be directly placed in the food processor) + 1 chopped for topping to be added after processing the mixture<br />
1 3/4 cup of chickpea flour<br />
1/4 teaspoon of baking soda<br />
1/4 teaspoon of sea salt<br />
1 teaspoon of cinnamon<br />
1 teaspoon of vanilla extract<br />
1 cup of chopped walnuts<br />
<br />
Pre-heat oven to 180 celsius (350 Fahrenheit right about).<br />
<br />
Mix all the wet ingredients either by hand or use the plastic S-blade for the food processor: Agave syrup, olive oil, eggs, mashed bananas or can be placed whole if using food processor.<br />
<br />
Pulse it so as not to have the mixture too liquified.  Once they have mixed well add the dry ingredients:  Chickpea flour, baking soda, sea salt, cinnamon, and vanilla.  Process on slow speed until thick and well mixed.<br />
<br />
Pour into a rectangular deep dish baking pan 9 inch length, 4 inch width and 2.5 depth (I used a silicone one lined with non-stick baking sheet).  Add the walnuts and chopped bananas.<br />
<br />
Bake until golden and run a toothpick through to test usually between 35-45 minutes.  Sometimes, I bake for less time to have a more pudding effect.<br />
<br />
Try this topped with any nut butter (great with almond, hazelnut and cashew butter) for breakfast YUMMY! A great way to start your day :)<br />

Maybe a note on the benefits of low glycemic banana bread and food in general. Food with low glycemic index will release glucose into your blood more slowly and steadily. If something has high glycemic index your blood glucose levels will rise very fast. This is OK after endurance exercise or for a person with diabetes experiencing hypoglycemia but otherwise - low glycemic food is better, healthier and such diet can also prevent diabetes.
