There is nothing like a kitchen filled with the smell of banana bread baking in the oven, especially during these cold fall and winter months. However, for many starting out on a vegan diet, it may seem like the experience of such a wonderful sensation is never going to happen again. Never fear, for there are wonderful vegan banana bread recipes!
This is a simple recipe with only 10 ingredients, and it is a cinch to put together. This bread tastes wonderful and even has an intense and flavorful banana taste that is second to nothing else that will come out of your kitchen. And to top it all off, the recipe is even very low in fat and much healthier for you than a traditional banana bread recipe!
First, preheat your oven to 350 degrees, and grease a 9 inch by 5 inch loaf pan. While the oven is heating, place the bananas into a large bowl and mash them very well using a fork. Then add all of the sugar, applesauce, molasses and oil. Whisk the ingredients quickly to mix together well.
Next, use a sifter to mix in the flour, spices, salt and baking soda. Using a wooden spoon, stir the mixture until all of the wet and dry ingredients are just combined. If you choose to use chocolate chips or nuts, this is the time to mix them into the batter as well. Do not over-mix.
Put the prepared batter into the pan and bake 45 to 50 minutes, or until the top is light brown and a knife inserted into the center comes back out clean. Let the bread cool before removing from pan.
Serve this vegan banana bread at room temperature or warm.
